spending long hours in the kitchen, Boulud likes nothing
better than to change things up when he does get time to
relax, usually heading into the great outdoors for a round of
golf, or fishing with friends. "The kitchen doesn't give you
much chance to enjoy being outside," he says.
And though he dreams of one day returning to the
countryside, buying a farm and "raising chickens and
rabbits", New York provides plenty of rural escapes. It also
allows him to indulge an unexpected passion: racing Ferraris
and Lamborghinis at the track. Although Boulud claims he
doesn't get to do it as much as he used to, he cheerfully tells
of a circuit he visits when stopping off at db Brasserie at The
Venetian Las Vegas. "It blows the cobwebs away," the chef
says, "and gets you out of your comfort zone."
